Everything Bagel with Watercress Cream Cheese

Watercress Cream Cheese
1 lb cream cheese
½ cup watercress, chopped
½ shallot, small diced
½ lemon, zest only
1 tsp kosher salt
½ tsp black pepper
Everything Bagel
4 everything bagels
1lb watercress cream cheese
6oz smoked trout
½ cup diced roasted beets
2 tbsp honey
Instructions:
Watercress Cream Cheese
1. Combine all ingredients in a bowl and mix until well incorporated.
Everything Bagel
1. Slice the bagels in half and toast.
2. Smear the watercress cream cheese generously over the bottom half of each bagel.
3. Top the cream cheese with the smoked trout.
4. In a separate bowl, toss the beets in the honey and place on top of the trout.
5. Top with the remaining bagel top.
