Jicama Slaw with Curry Lime Dressing

Ingredients:

Change up your summer side dishes and add crunch to cabbage-based slaws with jicama. In this recipe zesty lime is partnered with flavorful curry powder for a delicious dressing that your guests will love.


2 cups jicama, shredded

1 cup green cabbage, thinly sliced

2 green onions, greens and whites sliced

zest of 1 Wonderful Citrus lime

juice of 1 Wonderful Citrus lime

1 tsp honey

1 tsp curry powder

½ tsp salt

Instructions:

  1. In a medium bowl, stir together the jicama, cabbage and green onions.
  2. In a small dish, whisk together the lime zest, lime juice, honey, curry powder and salt. Pour the dressing over the vegetables and toss to coat.
  3. Refrigerate for 15 to 30 minutes before serving to allow flavors to blend.

Yield: 4 servings
